Salt cured beet with goat cheese anfd a trio of beet in vinaigrette

1996. Gruter vetlliener. Loie
Tuna tar atar, sesame twill, fennel slaw, ginger ponzo

Silverstone chardonney 2006
Truffled french onion soup duck wrapped in crepe, wine onion

Sauvignon blanc
Salad version of amuse bouche (super disappointing that they couldn't be more creative than giving me 10x more amuse bouche just because I wasn't interested in eating the meat dish. Did they think I wouldn't notice?)

Riesling
Pickled shitake halibut aromatic ginger foam, tempura scallions
